Zucchine e menta è un'abbinamento che troverete molte volte nei miei piatti perchè mi piace da morire.Ogni piatto che ha come ingrediente le zucchine finisce per avere la menta che lo va a profumare.E così è successo a questo semplicissimo risotto.
RISOTTO ALLE ZUCCHINE PROFUMATO ALLA MENTA
INGREDIENTI: 3 o 4 zucchine
2 bicchieri di riso
olio evo
mezza cipolla bianca
dado granulare vegetale
10-15 foglie di menta
parmigiano grattugiato
ESECUZIONE: in una pentola mettere l'olio e rosolarvi la cipolla tritata.Aggiungere le zucchine pulite e grattugiate e far insaporire.Aggiungere il riso e mescolare bene e a lungo.Aggiungere acqua bollente e mettere il dado granulare vegetale.Portare il riso a cottura aggiungendo gradatamente altra acqua bollente.Una volta cotto,spegnere il fuoco,aggiungere una generosa manciata di parmigiano grattugiato e le foglie di menta tagliuzzate finemente.
